I don’t know about you, but shopping nowadays makes me quite edgy. It’s not the supermarket itself. The Aldi we always go to has adapted to the new situation very well. It’s the limited time you get in the shop, the non-ability to turn back if you forgot something and the having to be aware of not spreading or receiving the Corona virus. Usually I am a huge fan of meal planning. I talked about the planning method that makes it possible for me to shop only once every two weeks before. The current situation, however, doesn’t make it doable to search for very specific ingredients. It’s now all about those basic ingredients that I can get my hands on and improvising meals at home. Read on to find my selection of five easy lockdown meals with minced beef as main ingredient!
When I pick protein sources for dinner I usually go for chicken breast, minced beef and fish from the freezer. Next to that I always love to have a well stocked pantry when it comes to baking supplies. Since you never know when you want to bake! So I will be dedicating four blog posts to easy lockdown meals. The first three blogposts will be dedicated to, you probably guessed it, chicken breast, minced beef and fish. The fourth blog post will be about five easy things to bake at home.
I have been very strict when picking the recipes and wanted to make sure that the ingredients would be very simple. As an enthusiast Aldi shopper, I wanted to make sure that the ingredients are to be found in the Aldi or can be made at home.

Five easy lockdown meals with minced beef
Creamy beef and shells
While the last post ended with a pasta dish, this one will start with one! This recipe asks for pasta shells, but again any pasta would do. Double cream can be used where the recipe mentions heavy cream. You need Italian seasoning, but it might so happen that you don’t have it or have run out of it. Don’t worry! Rick Stein’s meatballs in a spicy tomato sauce
Nathan and I love watching Rick Stein’s Secret France and this recipe is one of the recipes he makes on the show. I had a go at it straight away after watching the episode, but I did adjust the ingredients a bit. Instead of using half lamb and half beef mince, I only used beef mince. The haricot beans were replaced with butter beans and the fresh tomatoes with canned tomatoes. Also instead of the fancy piment d’espelette I used 1/2 cayenne pepper and 1/2 mild chilli pepper. Despite these adjustments, it still was a great dish. Words such as ‘I would pay for this’ were uttered. So definitely have a go at it!

Easy shepherd’s pie
The thing I love about a shepherd’s pie? You can use all sorts of vegetables for it. It’s a great dish for using up those vegetables that are about to go off. Haven’t got Worcestershire sauce? My big fat greek taco’s
Oofff this recipe screams ‘fresh spring/summer dish’ to me! This may not be approved by everyone, but if you haven’t got pita bread I reckon you can replace it with the naan bread I mentioned in the last post! Did you miss the easy peasy naan bread recipe? Find it here.
